Chili pepper water is found in almost every household in Hawaii. It an be used as a garnish on anything, act as a spicy marinade, or even as a drink. Other chiles may be used as well.
Here we will explore our favorite variation. It is more vinegar forward since we like our chili water to have a good amount of spice as well as a punch from the vinegar. Our approach of ingredients is to get the freshest products possible so that we can preserve that flavor in the bottle. We have multiple pepper plants at our house and using the peppers in the water is a great way to preserve and save the peppers.
Our chili pepper water can also be turned into many other things as well. You can add a few more peppers to the mix and blend it to make your own hot sauce. It can also be added to any marinade to give it some spice. For example, when marinating teriyaki steak or chicken, add a few drops to the mix for some extra flavor.
Our water includes the following:
Hawaiian Chili Peppers .

Thai Long Peppers
Young Ginger
Yellow Onion
Hawaiian Salt
Distilled White Vinegar
Process:
Clean Ginger and Peppers. Peel Ginger and slice. Take stems off peppers.
Peel and slice the onion.
Bring water, vinegar, and salt to a boil.
Place ginger, peppers, and onion in a container or jar in which you will store the water.
Pour hot liquid over the peppers and let mixture come to room temp. Refrigerate.
